The Long Apron cooking school

Spicers Clovelly Estate

The Long Apron's renowned chef, Cameron Matthews, holds cooking classes two Saturdays a month where you can cook, eat, laugh and learn how to make some of Cameron's truly incredible dishes. In a culinary career spanning 17 years, Cameron has also been Executive Chef de Cuisine at Siggi’s Restaurant, Brisbane and Executive Chef of Restaurant Lurleen’s at the Sirromet Winery in Mount Cotton as well as honing his skills overseas.

French Cooking Classes: ‘French Slow foods’ welcomes winter with some cold weather favourites such as daube of beef, confit duck, braises and wet roast lamb.

Italian Cooking Classes: ‘Little Italy’ showcasing handmade pasta and sauces; gnocchi, authentic pizza and Italian salads & more.

Participants will learn how to produce dishes such as free range chicken and asparagus terrine; chicken in salt crust with hay, grapes and mushrooms; pork rillettes and caramalised shallot tarte tatin with goats cheese – and enjoy their creations under the Jacaranda tree on the beautiful grounds of Spicers Clovelly Estate.

All classes are inclusive of lunch, wine, take-home The Long Apron branded apron, recipes from Cameron and a take-home gift. Classes run 10am to 3pm.

The Tamarind Cooking School

The Tamarind Cooking Retreat offers a cut above the rest with their purpose built cooking Pavilion featuring state of the art cooking stations for two, air-conditioned comfort and small intimate classes of 12. Not to mention the spectacular views perched amongst the beautiful green grounds overlooking the forest.

Each class is highly informative and hands-on. Each participant will create 5 recipes from scratch and be taught in a simple structured way to enable you to perform these at home for friends and family immediately.

Each person receives a folder containing recipes, notes, and a signature Tamarind Apron. There will also be a ‘pantry list’ with a ‘description of use’ for all the basic ingredients required for use at home.

At the end of the day indulge on your creations... have a laugh, have a glass and enjoy your new found passion...
